Rosti and the Airfryer




So I tried out making a rosti in the airfryer the other day, mainly going by the recipe that Philips has suggested.

Ingredients

  • 250 g waxy potatoes, peeled
  • 1 tablespoon chives, finely chopped
  • Freshly ground black pepper
  • 2 tablespoons sour cream
  • 100 g smoked salmon

Method

  1. Preheat the AirFryer to 180°C. Coarsely grate the potatoes into a bowl and add three-quarters of the chives and salt and pepper to taste. Mix well.
  2. Grease a pizza pan with olive oil and distribute the potato mixture evenly in the pan. Press the grated potatoes into the pan and brush the top of the potato cake with olive oil.
  3. Place the pizza pan in the fryer basket and slide the basket into the AirFryer. Set the timer to 15 minutes and fry the rösti until it is nicely browned on the outside and soft and done on the inside.
  4. Cut the rösti into 4 quarters and place each quarter on a plate. Garnish with a spoonful of sour cream and put the slices of salmon on the plate next to the rösti. Sprinkle the rest of the chives over the sour cream and add a touch of ground pepper.

We grated the potatoes ourselves. We didn't use waxy potatoes, just Russets.

It took a while to hand grate these!

The Philips recipe says to put the potato into a pizza pan but unfortunately we didn't have one. So we improvised and used a metal plate.

After that, we tossed it into the air fryer for about 10+ minutes at 200 degrees.

Kinda tasty actually

Honestly it wasn't very successful, due to a few points.

1 - We didn't dry the potatoes after grating them. And thus they were too soggy and didn't crisp up well.

2 - We could have used the wrong potatoes.

3 - The metal plate was really too small. But we don't have any other suitable plate. A friend suggested that we use aluminium foils. That can probably work, although I fear tearing it when trying to remove the rosti.

4 - I'm not sure if I had enough oil, because it kinda stuck to the plate. Took a long time to scrape off the crispy corners.

5 - Again, it was too small. We grated 3 potatoes. It would have taken hours for us to finish airfrying them. In the end, we just tossed it into a pan and fried them like Marche.
