Air Fried Paper Wrapped Chicken




We love paper wrapped chicken (纸包鸡) at home, but it's not very common, and it is super oily. So I decided to try it out in the air fryer. Besides, I hate deep frying. It's messy and a chore to clean.

What you need:
4 pieces of chicken. I bought the upper thigh pieces from NTUC. It just so happened to be ~500 grams deboned. In the future we'll probably try other cuts, or pre deboned pieces.

15g shallots
20g garlic
15g ginger
½ tbsp sugar
¾ tsp salt
½ tsp ground white pepper
½ tbsp light soya sauce
1 tsp dark soya sauce
1 tbsp oyster sauce
1 tbsp Worcestershire sauce
1 tbsp Shaoxing wine
1 tbsp white sesame oil
1 tbsp vegetable oil

What to do:
I used a blender and blended the shallots, garlic and ginger together.
Afterwards, I mixed all the ingredients together.

We tossed the chicken and the marinade into a plastic bag and let it sit overnight.

When it came for the time to cook it, we cut out baking paper into appropriately sized pieces and wrapped the chicken up in it.

Then we heated up the air fryer at 120 degrees and put it in for about 15 minutes.
After that, we increased the heat up to 200 and blazed it for 10 minutes more.
You know it's done when the juices flow!
 We changed the temperatures because we were hoping to get the outside to be a little crispy, just like what you get from real deep frying. But the air fryer doesn't work well like that I think, especially with all the tasty juices trapped inside.


Very juicy!

We'll probably just blitz it at 200 degrees for ~20 minutes when we do it next time. It was delicious and relatively fuss free with the air fryer, so we'll definitely be doing this in the future and skipping the deep frying!
