Ginger marinated air fried chicken

I'm on a ginger kick these days. It's like I've somehow discovered the wonderful taste of ginger. And one of the best ways is to do ginger marinated chicken.

The pics in this post have pandan in them, I was trying to experiment with pandan leaves but somehow they didn't leave any strong flavouring. The ginger just washed it out.

First, we chop up some ginger. I used about 10cm of ginger for 2 pieces of chicken thighs. Frankly this is too much. I think 5cm will do.

After that, toss it into the food processor and blend it nice and good.


Rub the chicken in it and leave it to marinate for a couple of hours in the fridge.


Air fry it at 200 degrees for about 15+ minutes. It doesn't look like much but it's delicious!
