Smoking chicken thighs without a smoker

Can you smoke meat without a smoker? Yes you can! It takes less than half the time a smoker would take, because the heat from the flame is actually cooking it too, but the big pro is it works without needing yet another kitchen accessory!

First we bought Hickory Smoking Chips from Amazon.

Then we bought a simple wire mesh that fits over a pan.

We then made aluminium packets containing the wood chips like so.


For smoking chicken thighs, we only prepared 2 - 3 packets of these wood chips. Each wood chip packet will be used for around 30 minutes.


To let the smoke waft up, we poked holes in the wood chip packets with a fork.


The whole set up is finally ready!
Place 1 wood chip packet into the pan and put your wire mesh on the pan. Then place your meat on top of it. Cover it so we don't let the wonderful smoke out.

Set on middle / low flame for about 2-3 hours, swapping out the wood chip packets as needed.

Result


We tried it once, the lighter shaded one was smoked for a shorter amount of time (around 2 hours). The darker delicious looking one was 3+ hours.

Both had the delicious smoked flavour.
